Windows have many components to them so while you are googling "Window Sills", you may be meaning to search "Window Jamb Extensions" or "Vinyl Jamb Liners" or something of the sort.
Best described by https://www.championwindow.com/, a window sill is "the shelf-like, flat piece of the window trim found at the base of the window". So it's actually just one part of the window that you would be finishing. The window jamb extension is what the material that fills that entire space between the window and your drywall is referring to. As seen in our title picture.
There are a few options for how to do this and the kind of material that you use; MDF, Med-Ex, drywall, and PVC are the most common materials and each have different outcomes.

In high condensation areas such as the basement, bathroom and kitchen, it is HIGHLY recommended to go with something moisture resistant. Otherwise you will resent all of the hard work that was put into your jamb extensions go down the drain as soon as the first person accidentally puts a wet glass on top of your sill without a coaster.

To get back to the question "How to finish off window sills", the answer is "call Trim Rite Mfg. and get custom jamb extensions made to fit your windows.
We take the measurements of your height, width and depth (at each corner!) and manufacture the jambs here in our shop in Saskatchewan, Canada. We completely build the frame for your extension by screwing together each corner. We then disassemble the jambs by removing the screws and laying each piece flat for the purpose of cheaper shipping costs. We include the necessary silicone for installing as well as our patent pending installation clips and the screws to re-assemble the jambs.

Once you receive your flat packages of PVC Window Jamb Extensions, you simply re-assemble the jambs using the provided screws. You then apply the supplied silicone to your window and pop the jamb into place, securing it until the silicone is set using our supplied clips.
12-24 hours later once the silicone is set, the clips can be removed and your window is now ready for casing.
By taking the depth measurement at each corner of your window, we are factoring in the depth change across the length of your wall. Very rarely is a wall perfectly straight across the whole window so using our solution, you won't have to worry about trimming off excess material once they are installed.
We also take the pain off of your back by only charging you for the amount of material that you use. You are not paying for material that ultimately will sit in a corner waiting to be used that you just can't bring yourself to recycle because that was hard earned money used to buy it.
...The other options are to hire a contractor (or diy) to finish the extensions for you. You will likely use one of the above mentioned materials which would require buying more material than you will likely use to complete the project, then fill nail holes, sand and paint the jambs and then repaint every 5 or so years as required.
